Our food safety training courses are open to food business owners and their employees.
We offer nationally-recognised qualifications that are delivered by specialist trainers who have industry experience or are current enforcement officers.
In House Training
Our specialist trainers can deliver cost effective in-house training courses to organisations and their staff at a time and location of your choice. This is a convenient way to provide staff training, all you need to do is provide a venue, refreshments and delegate list and we will do the rest. Free Level 2 Food Safety Training Courses
Stockton-on-Tees Borough Council's Environmental Health Service is offering catering businesses across the borough the opportunity to gain a Level 2 Award in Food Safety in Catering to help upskill their workforce, all free of charge.
This course will help you to:
- gain an accredited qualification (Highfield Awarding Body for Compliance)
- provide safe food and comply with legal requirements that food handlers are supervised and instructed and/or appropriately trained
You will also be able to receive advice from experienced qualified trainers and ask any questions.
Who is eligible for a free place?
All catering businesses who employ 1 to 50 staff within the Borough of Stockton-on-Tees including cafés, restaurants, takeaways, mobile food vendors and public house tenants are eligible to apply for 1 free place per business (additional paid places are available at £55 per person).
250 free places are available on a first come, first served basis.

Food Allergen Training
Since 2014, caterers have had to comply with new regulations with regards to listing allergens for their entire menus. This course covers everything your business needs to know to comply with the EU Food Information Regulations including prepacked for direct sale (PPDS) food.
Our training covers:
- common allergens and intolerances
- control of contamination and cross-contamination of allergenic ingredients
- procedures relating to the accurate communication of ingredient information - from supplier to consumer
Duration
The course lasts 1 day.

£50 per person (accredited by SBC).
Allergen Awareness Training
This in house course is designed to provide persons handling allergens with an awareness of the importance of allergen control. The training can be tailored for various sectors including restaurants, takeaways, schools and early years settings.
Duration
Half day training.
Cost
£250 for up to 20 delegates.
HABC Level 3 Award in Education and Training
This course has been designed to provide an introduction to teaching for individuals who would like to work or currently work in Further Education colleges or independent training providers. It can meet the needs of a range of trainee teachers, such as individuals not currently teaching or training - achievement of the qualification does not require practice other than microteaching.
Duration
Minimum 48 hours guided learning.
Level 2 Award in Food Safety in Catering and Manufacturing
This qualification focuses on the needs of the food handlers in the catering, hospitality and manufacturing sectors. It enables employees to take responsibility for the following food safety procedures, to receive and store food safety and to keep themselves clean and hygienic.
Completing this course will allow you to progress onto Level 3 Award in Supervising Food Safety.

Level 3 Award in Supervising Food Safety in Catering and Manufacturing
This three-day course provides an opportunity to look more deeply into food safety.
Topics include ensuring compliance with food safety legislation, the application and monitoring of good hygiene practice, how to implement food safety management procedures and the application and monitoring of good practice regarding contamination, microbiology and temperature control.
Assessment
45 multiple choice questions.
Cost
£290 per person.

Level 4 Award in Managing Food Safety
This course is designed with management accountability in mind. It is intended to provide those in managerial or supervisory positions with appropriate knowledge to ensure that their company operates in a hygienic and efficient way.
Completing this course allows you to deliver the Level 2 Award in Food Safety in Catering course.
Duration
The course lasts 5.5 days.
Cost
£500 per person and cost of exam paper and course book.
Level 2 Award in Hazard Analysis and Critical Control Point (HACCP) principles
This qualification is for people who work in the food industry who require an appropriate level of knowledge and understanding of Hazard Analysis and Critical Control Point (HACCP).
Duration
The course lasts 1 day.
Cost
£75 per person.
Assessment
There is an examination paper that consists of 15 multiple choice questions.
Level 3 Award in Hazard Analysis and Critical Control Point (HACCP)
This course expands on the fundamentals in the Level 2 HACCP course and is suitable for supervisors, managers, chefs and HACCP team members.
Duration
The course lasts 3 days.

£400 per person.
Assessment
There is an examination paper consisting of 30 multiple choice questions.
Level 2 Award in Nutrition (Healthier Food and Special Diets)
This course provides a basic understanding of nutrition and is targeted towards catering establishments involved in the selection of menus, recipes and ingredients.
Completing this course with allow you to progress onto Level 3 Award in Nutrition for Healthier Foods and Special Diets.
Duration
The course will last 1 day.

£65 per person.
Assessment
There is an examination paper consisting of 20 multiple choice questions.
